Finally it´s friday. Sadly I´m ill but nevertheless it still means that I don´t have to go to school the next two days 😉
On sunday I usually prepare the food for the whole week. I have afternoon lessons 3 times a week, and on one day I have school till 2:15pm. That means I don´t have time to cook myself something. Of course I could eat in the cafeteria, but the food there is…not going to mention but the opposite of delicious. In addition, it´s so expensive that I would be poor after 1 month of school! 😀
„preparation is the key to success“
It´s very easy to cook for the whole week and it doesn´t even take that much time. For example you can just double the amount of your lunch on saturday and sunday, place it in a lunch box and you already have to lunches on the go. For the other three days I usually have almost the same like quinoa, bulgur, pasta, rice or potatoes. On one day I have it with tofu, tomatoes, mushrooms and eggplant. On the other day with falafel, broccoli and maize and on the last day I have a sweet version out of bananas, apples, cinnamon, chickpeas and soy yoghurt. The meals for wednesday, thursday and friday I place in the freezer. The evening bevor I take it out so that the next day it´s not frozen anymore. And yes, in school I have a cold lunch, but that doesn´t matter. A lot of people think that for example cold sweet potato fries or cold quinoa isn´t tasty at all, but that´s not true. Of course I prefer a warm lunch, but when it´s warm outside there´s nothing better than a cold quinoa-vegetable-chickpea salad 🙂
Here´s a simple example of my lunch I had on tuesday. The lunch box is from monbento and I´m so in love with it. You can place the box in the microwave oven, in the dish washer and there is no risk of running out food or sauces (believe it, that happened quite often to me! ) And come on, doesn´t it look cool? My friends are already jealous 😉
My lunch consisted out of:
- sweet potato fries
- baked fennel
- pumpkin falafel: Simply purée 150g chickpeas with some pumpkin ( I used baby food! ) and bake the falafels for 20 minutes
- muffin bun: for 6 muffins you need 15g flaxseeds, 60g oats, 10g sesame, 15g different seeds, 1/2 smashed banana, milk of choice, super foods of your choice..mix all the ingredients and bake at 160degree for around 30 minutes. Of course you can change some of the ingredients. For example instead of sesame you can use chia seeds, desiccated coconut..
After that meal I have energy again for the next hours of school. A balanced ( balanced doesn’t mean only fruits/vegetables! It also doesn´t mean 100% healthy! ) meal is the requirement for a good functional brain. When you are hungry, you can´t concentrate at all because you think about food the whole time.
So take the time to prepare your food, it will be worth it!
